Delicious Spanish Mackerel Recipe with Lemon Essential Oil

Fishing in the Gulf of Mexico? YES PLEASE!
As we spent 2.5 hours trolling around the wreckage of a sunken airplane, we came home full handed with 14 fish! What were we going to do with all these fish? Eat them of course!

Ingredients:
3 large garlic cloves, minced
1 tsp ground coriander
1 tsp ground cumin
1 tbsp dried parsley
1 tbsp dried dill
3 drops lemon essential oil
3 tbsp olive oil
½ Spanish Mackerel, cleaned and gutted (skin on)
Directions:
Preheat oven to 350 degrees F.
1. Combine the first 7 ingredients in a small glass or metal bowl (essential oil will eat away at ceramic or plastic) and mix. This is our fish rub!
2. Place Spanish Mackerel on aluminum foil skin down and spread the rub all over the meat.
3. Fold fish back together & wrap up tight in foil.
4. Place foiled fish on metal baking sheet & bake for 30-40 minutes, or until meat falls off the bone. Mmm flaky funky fish meal!
