As a stay-at-home mom, I have a ton of free-time. So much time I can constantly spend every single second watching my toddler son grow.

Just kidding. I wish!

I wish we had a full-time chef to make foods that comply with all of our allergy-laced diets, a maid to clean up constantly after a messy toddler, and a handyman to fix everything that breaks throughout the day. Oh and a gardener! A gardener would be fabulous!

Since we obviously don’t have a lot of time and definitely do not have a chef, I needed to a quick dessert to whip up for my husband’s work picnic over the weekend. Something I could make in my “spare” time and could last in the fridge until we were ready for go-time. I also had to take into consideration dietary restrictions. Vegetarians consuming no gluten. Easy peasy.

I did a little search for essential oil recipes and came across Wild Orange Power Bites. Cooking and baking with essential oils is SO MUCH FUN! How many people can say they’ve knowingly eaten something laced with essential oil? It’s so exciting to take that first bite! Any way to spread the essential oil love, I’m going to do it and I might as well do it creatively!

Wild Orange Power Bites

Life is busy and constantly on-the-go. These nutrient-packed power bites are great for those days when you just need a little extra boost. They are made with Wild Orange essential oil will help keep your body full of energy during your busy day.
Boost of yummy nutrients before or after an intense workout.

Ingredients 
1 cup sugar-free shredded coconut, divided (CooKoo for Coconut)
1 cup sugar-free almond butter (Justin’s Classic Almond Butter)
1 cup sugar-free dried cranberries (Wilderness Poets Oregon Cranberries)
1/2 cup local raw honey
1/2 tsp salt
2 tbsp chia seeds
3 drops doTERRA Wild Orange essential oil

Instructions
1. Place all ingredients into metal or glass bowl, reserving 1/2 cup of the shredded coconut in a separate bowl to the side.
2. Mix until well combined.
3. Roll into 1 inch balls and coat in the reserved shredded coconut.
4. Store in the refrigerator.
